Finding gainful employment at an Aberdeen emporium James was quickly captivated by a whole new world of tastes, smells and exquisite flavours. Anything seemed possible and James quickly garnered a reputation for obtaining the unobtainable. If they didn’t stock it, they’d find it. If they couldn’t find it, they’d make it. When John joined the business Chivas Brothers was born.

The brothers’ eye for an astute business opportunity brought them hard earned success in Aberdeen and beyond, but for James & John, success always tasted better shared. However, they were generous with their time and their money, from financing a window in an Aberdeen church to James being honoured with a trusteeship of the Royal Infirmary. From the cellar beneath their emporium, the brothers began a tradition of ageing whiskies. As their clientele began demanding a smoother, richer whisky experience, they began to blend together these aged Scotch whiskies.  Humble early experiments developed to solidify their position as true pioneers in the art of blending.

 

Chivas Brothers

In fact, Chivas Brothers became famous for their fine luxury products with orders coming in from across the globe. In addition, James Chivas received his first Royal Warrant in 1843, serving Queen Victoria at her Balmoral countryside retreat. This Royal approval ensured that Chivas Brothers had the perfect foundation to realise their ambition.

 

Chivas taking New York

Fast forward to 1909, Master Blender Charles Howard and Alexander Smith create a 25-year-old blend that would become the world’s first luxury whisky. The Blend

How is it produced?

White wine made from grapes harvested in France’s Cognac region is double-distilled to form eaux-de-vie. The middle portion of the liquor—the ‘heart’—is then aged in oak barrels. Martell uses clear white wines in their distillation process to retain the full aromas of the grapes.

The blending of different eaux-de-vie is what makes every cognac unique. The Noblige gets its round and powerful flavours from the combination of over 70 eaux-de-vie made from wine grapes harvested in the Borderies region of France, where grapes are known for their exquisite floral notes and smoothness.

Deep gold to the eye with vibrant copper hues, the nose carries hints of lightly toasted caramel and vanilla under fruity notes of citrus and pear. Years of ageing in fine-grained oak also bring out the Noblige’s distinctive woody tones in its aroma.

Accompanying the floral tastes unique to Borderies’ eaux-de-vie are rich vanilla, prune, cedar, and caramelised grapes. Cognacs classified as Very Superior Old Pale (VSOP) are required to age for at least four years. Because of this process, the resulting product yields lighter and more subtle flavours on the palate.

Though the Martell Noblige is technically a VSOP, it still boasts an explosion of flavours due to its robust formulation of eaux-de-vie. This gives it an unusually complex flavour profile comparable to no other.

JACK DANIEL Fire Tennessee Whiskey is a classic cinnamon-infused spirit, with a nose that’s immediately redolent of Red Hots, but not overpowering. The body is more quiet and candylike than, well, fiery.
