Crowned with the name of the year period of our foundation, this sake is the top-grade among our regular products. As a kimoto sake, it has for the first time in history attained the monumental achievement of twice winning the gold medal in the rare junmai class at the Japan Sake Awards (brewing years 2000 and 2002), as well as winning the gold medal at the Tohoku Sake Awards (brewing year 1997). But winning gold medals is not our ultimate aim. What our brewery expects from this sake is nothing less than to tug at the heartstrings of our customers by going beyond convention and breaking all bounds. Its noble and glamorous taste is different from any other sake. Because of its distinctive character it has been called “King of Sake,” inspiring Kiyoshi Yoshizawa, former professor of the Tokyo University of Agriculture (and former head of the National Research Institute of Brewing), to call it “the greatest sake masterwork.” We are strongly determined not to spare any effort in maintaining this top level.

Rather than simply attaching the appellation ginjo to a product, we at Daishichi were of the opinion that such a sake would have to carry an unmistakable high class stamp and give the impression of forming its own lineage. Instead of opting for the bottom-up way of product development where we would raise the polishing ratio of one of our products already on the market to produce a “middle level ginjo,” therefore a top-down approach was necessary: stepping down in style and quality to ginjo level from a top class existing product. Of course, during that process we gave its own individual character to Masakura and we took care to create a junmai ginjo with a high grade of perfection typical for Daishichi. The special circumstances of its origin are clear from the character of Daishichi Masakura. While basically being a ginjo, it has a richness and maturity typical for junmai made with the kimoto method, and there is a wide range of ways to drink it, from cold to warm. Also as regards food pairings, it is an almighty sake that fits to the whole meal, from delicate starters to the heavy main dish, and that since its release has been praised by many connoisseurs in various settings. What if you were allowed to bring only one bottle to a desert island? We recommend this sake.

KAMOTSURU Daiginjo Kishio. It is a Daiginjo brewed using “Yamada Nishiki” produced in Hiroshima prefecture. The production area, Takayacho Zoka, Higashihiroshima City, is located in the plateau basin, about 10km north of Saijo, where the sake brewery is located, and about 350m above sea level. Blessed with natural conditions such as water, sunshine, day and night, and temperature differences in summer and winter, it has been a region where rice cultivation has been flourishing since ancient times. In 1989, under the call to “prepare sake with local rice and local water,” local rice farmers and sake breweries cooperated to form the Higashi-Hiroshima Sake Rice Cultivation Promotion Council, and the cultivation of sake rice began. I did. The Higashi-Hiroshima Sake Rice Cultivation Promotion Council started cultivating only a single variety of “Yamada Nishiki” in order to differentiate it from other production areas in the prefecture, and while performing genetic seed selection and unification of cultivation methods by engineers, We are trying to improve the quality.

He was a great sake expert who devoted good part of his time to introduce sake to the french. Mr. Christian Mazzalai from Phoenix was also inspired by his passion for sake. We appreciate Mr. Kuroda's enlightenment activities for Japanese sake, and we would like to offer our prayers and condolences to him.

Tatenokawa and the band decided to collaborate out of respect and gratitude to Mr. Kuroda who spent many years working hard to promote sake in Europe. Christian says on his social media; “Mr. Kuroda was a great master who taught all the beauties of life which include sake, and is still inspiring us every day.”A portion of sales from the sake will be donated to the Japanese Red Cross Society to support the progression of medical technology.

This champagne is a brightly sparkling, light golden yellow liquid with an abundance of fine and elegant bubbles. The nose reveals initial aromas of ripe fresh fruit (white and yellow peaches, apricots), tropical notes (lychee and pineapple). It then opens up with the fragrance of vanilla before developing notes of milky caramel, breadcrumbs and yeast, culminating in aromas of dried fruit and honey. An explosion of freshness in the mouth, followed by strong persistence. The complex aromas of fresh fruit and caramel perpetuate the intensity.
