Product History
Founded in 1715, Martell is the oldest of the great Cognac Houses. The elegance, complexity and balance of Martell style are the result of a unique savoir-faire: the distillation of clear wines only and the ageing of its eaux-de-vie in fine-grain oak barrels.
This rare expression of The GlenDronach was distilled over fifty years ago in
1971, filled into Spanish oak casks from the bodegas of Jerez in Andalucía, and
left to quietly mature in our traditional dunnage warehouses.
Over the decades, custodianship has passed down through generations at The
GlenDronach Distillery, each cask nurtured by our Master Blender. A very small
number of casks which demonstrate exceptional character are left to reach the
celebrated age of fifty years.
This rare bottling represents a milestone in the near two-hundred-year history
of The GlenDronach distillery. Selected by Master Blender Rachel Barrie, this is
the first fifty-year-old expression of The GlenDronach to be released.
The GlenDronach Aged 50 Years has matured in rare Pedro Ximénez and
Oloroso sherry casks, followed by a final maturation in a single Pedro Ximénez
cask before coming of age.
Each of the limited release bottles of this prestigious single malt scotch whisky
has been individually numbered to reflect its rarity.
Tasting Notes
NOSE
Rich and seductive with mellow layers of alluring complexity. Ripe dark cherry and plum are the prelude to a harmony of rolling stone fruit, gentian and a plume of smouldering tobacco -lifted by lilting notes of bramble, orange and cranberry.
PALATE
Dense undertones of dark chocolate, tobacco and cocoa form an exquisite overture of flavour.
A perfect counter comes in a crescendo of clegant plum and luxurious black cherry, enrobed in a swathe of velvet espresso.

Inspired by their origins and how our liquid was first crafted in the early 1800s, The Glenlivet 12 Year Old Illicit Still is a limited edition whisky that has not been chill filtered for an authentic taste.
In 1824, before our founder George Smith licensed his distillery, the remote Glenlivet valley was the perfect location for the illicit scotch whisky trade, with distilleries handcrafting in smaller copper stills in bothies well hidden from the law.
It was there in the isolated valley that George Smith would learn his craft. Slowly and carefully distilling what would soon become the world-renowned single malt scotch whisky that established the signature fruity floral Speyside style. GlenDronach Distillery has released its ninth limited edition release of its Cask Strength Highland Single Malt Scotch Whisky, matured in Pedro Ximénez and Oloroso sherry casks from Andalucía. This richly-sherried expression offers connoisseurs a deeper insight into the distillery’s signature profile, by bottling the whisky at its natural cask strength of 59.4%, to bring out the full character and depth of maturation.
With each unique Cask Strength release, Master Blender Dr. Rachel Barrie individually selects and combines the perfect marriage of sherry casks before they are bottled at natural cask strength, as was custom before the turn of the 20th Century. With every expression of The GlenDronach, the deep, natural colour is drawn from slow maturation in Spanish oak casks. The Pedro Ximénez casks impart rich, fruit flavours, whilst dry and nutty notes come from the Oloroso casks.
Little has changed over the centuries at The GlenDronach, where they carry forth the tradition and time-honoured methods that have been practiced since the distillery was established almost two hundred years ago. Founder, James Allardice, was an early pioneer of sherry cask maturation and deemed the distillery’s complex and full bodied spirit perfect for slow maturation in Spanish oak sherry casks; a popular import into Scotland from Spain in the 19th century.

A collaboration with renowned pastry chef Jordi Roca of three Michelin star restaurant El Celler de Can Roca, this release brings the worlds of chocolate and whisky to life. To create the first limited edition whisky in a new annual release series, The Macallan Whisky Maker Polly Logan embarked on a unique journey to Girona, Spain, where she immersed herself in the world of chocolate, exploring the chocolate-making process and uncovering the distinctive flavour profiles at Casa Cacao.
Polly worked with Jordi Roca, owner of the famed chocolate boutique and hotel, Casa Cacao and the youngest of the acclaimed Roca brothers. As part of the exploration, she also spent time with master chocolatier of Casa Cacao, Damien Allsop.
Dassai Shochu is made by distilling Dassai sake lees, fresh of the day.
Because of the way it is made, we can’t produce as much as we would like, but it allows us to keep the clean aromas of Dassai in the shochu.
The alcohol content is set at 39% because we believe it brings out the aromas better this way.
DASSAI 23 Hayata. By pasteurizing sake, enzymes and yeasts are deactivated, thus improving the preservation of the sake.
This technique has been known among toji (master brewers) since the end of the Muromachi period (1336-1573) when it was known as nizake. It was then further refined and developed into a technique known as hi-ate, which has made sake one of the world’s rarest preservative-free alcoholic beverages.
Furthermore, at Asahi Shuzo we are not afraid of the high cost of heat pasteurization: after filling the bottles at a low temperature (below 5°C), we use a hot water shower method to heat pasteurize our sake and then immediately cool it down to minimize the damage caused by the heat to the sake.
However, even with the most careful heat sterilization, it is still inevitable that the heat would alter the quality of the sake, but by adding micro-bubbled* carbon dioxide to the sake, it is now possible to achieve the same results in less than 15 seconds at 65°C.
Rather than sake that will get someone drunk, or sake that will sell the most, Asahishuzo's aim is to create sake for tasting - to brew sake that is truly delicious and enjoyable for all. Their brand Dassai is the personification of this philosophy. We must note, however, that they have no intention of brewing elusive phantom sake that doesn't sell. Quite the opposite, their hard work and convictions have made Dassai one of the most popular and universally relatable sake in the world.
